Eating my way through the NYTimes list of The 11 Best Foods You Aren’t Eating.

Day 1: Beets
Beets are one of the least intimidating items on the NYT list. I’ve had them in Russian salads and as a garnish in Cuban dishes, but since I don’t know how to make either of those things I decided to go with something a bit more familiar. I bought the steamed, chilled beets from Trader Joes and sliced them into a green salad with feta and vinagrette. Simple enough and apparently my body is now swimming with anti-oxidants.
While I was eating them though I wondered why some hippy skincare line hadn’t come up with the idea of using beet-pigments in make up. It tints everything it touches forever. Maybe this is what tattoo ink is made out of?
